I always aim to create dishes that are adaptable for various dietary needs, whether that’s gluten-free, dairy-free, or vegan. For example, I can easily substitute dairy with plant-based alternatives in many of my dishes, or adjust for allergies by substituting ingredients like nuts or shellfish. I think it’s important that every guest has a great dining experience, regardless of dietary preferences.
Time management in a kitchen is all about organization and prioritization. I like to break down each dish into its components and start by preparing what needs the longest cook time first. For example, I’ll prep my sauces or stocks early in the day, so when service starts, I’m focused on execution and finishing touches. I always keep an eye on the overall timing to ensure everything comes together seamlessly.
